Instructions

Prepare the Avocados

Halve the avocados, remove the pits, and scoop the flesh into a food processor or high-speed blender. Ensure the avocados are perfectly ripe and soft to achieve the silkiest texture.

Blend the Base

Add the cocoa powder, monkfruit blend, vanilla extract, and sea salt to the processor. Pulse briefly to incorporate the dry ingredients with the avocado.

Achieve Consistency

Turn the processor on low and slowly drizzle in the almond milk. Increase speed to high and blend until completely smooth and creamy, stopping to scrape down the sides as needed. If you prefer a thinner consistency, add milk one tablespoon at a time.

Spoon the mousse into individual serving glasses or bowls. Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the texture to set. Serve chilled, optionally garnished with cacao nibs or fresh raspberries.
